Chef Rajeshkannan Srinivasan, affectionately known as Chef Raj, is originally from Trichy, Chennai in southwest India. Raj originally attended college in computer engineering but, when considering the future job market, he soon realized that he would have a much more secure career in the culinary arts. And besides job security, it's the kind of career that would take him around the world.
Raj, and his friend Andy (of Eats Café), enrolled in the three-year program at the Food Craft Institute in their hometown of Trichy. After graduation in 1996 Raj was an opening-team member at the brand new, five-star Residency Hotel where, for two years, he cooked continental cuisine and became their Garde Manger, responsible for preparing cold foods.
Through his college contacts, Raj gained a position with Carnival Cruise lines working aboard the Celebration as a Saucier. The ship made regular stops in Cayman where he got to catch up with his old friend, Andy, from his college days. A year later, in 1999, Raj was offered a job at the newly opened "Hook's" restaurant on Seven Mile Beach (at Treasure Island Resort.) He cooked the breakfast and lunch menus and became the Breakfast in Charge in 2000 and the Kitchen Manager in 2003.
When Frank Fleiger, former general manager of Eats Café, Legendz Blvd Bar, and Yoshi Sushi, began his search for an Executive Chef for his new restaurant he asked Chef Andy who quickly suggested Raj. Knowing Andy to be true to his word, Frank didn't hesitate to offer Raj the position - and hired him to assist even during the development phase of the newest restaurant in Grand Cayman, Copper Falls Steakhouse. The creative menu draws heavily on Raj's experience with steaks, sauces, seafood and pastas. Besides seven cuts of steak and a 12 ounce rack of lamb, imagine such delicious entrées as a Parmesan and Dijon Crusted Chicken with a garlic demi glaze, Horseradish and Dill Coated Salmon with a dill-lemon sauce or a 12 ounce Pork Chop with chile mole and pork au jus. This new comfortable restaurant, the first in Cayman to offer a non-smoking environment, also offers its patrons the chance to choose the vegetables, starch and sauce they prefer with the main course.
With Chef Raj's great inspirations, and Copper Falls' calming atmosphere and great location off Seven Mile Beach (across from the Strand), it's little wonder that the restaurant is fully booked.
